Spinach & Artichoke Stuffed Shells

So I wanted to share this delicious and easy (not so easy, artichokes are a pain) recipe with you! If you like pasta, and you like veggies, you'll love this.

 

What You'll Need:

1 Box of Jumbo Pasta Shells

About 4 large handfulls of Baby Spinach

4 Large Artichokes

Half of a Large Onion

3 Large Garlic Cloves

1 Large Egg

1 Jar of Pasta Sauce

1 Cup of Heavy Whipping Cream

1 Tablespoon of Ricotta Cheese

1 1/2 Cups of Aged Parmesan Cheese

Butter or Oil (for sauteing)

Salt, Pepper and any other Seasonings to taste 

 

Prep:

You will need to remove the leaves from your whole artichokes to get to the artichoke hearts. I suggest buying frozen artichoke hearts (this step is very tedious and annoying). Also, you'll need to finely chop your garlic and onions, and boil your shells.

 

Directions:

In a large skillet, saute onions, garlic, spinach and artichoke until the spinach is nicely wilted. Don't forget to season to taste with salt, pepper, garlic powder etc. After this is finished, combine your veggie mix with heavy cream, ricotta, parmesan, and egg. In a large baking pan, pour pasta sauce to cover the entire bottom. Now it's time to stuff your shells! With a spoon (or whatever you like) put about a tablespoon of your spin-choke stuffing into each shell and place them in the pan. Sprinkle parmesan cheese on the top, cover with foil, and bake at 350 degrees for 20 minutes. Thank me later!!
